I've been tempted by "Sins" as i really enjoyed GC2 so much, but I was worried it had been streamlined a little, but that does sound awesome.

Yeah trust me. It is AWESOME. I have Sins of a Solar Empire: Trinity. You would think they just bundled the expansion packs together. But no. They combined them. Added new stuff. Fixed balance issues etc etc. Basically they made a new and improved version of the game with the features of all the expansions. And it was awesome. Love it. I suggest you try it out, the combat is simple and it can sometimes get too easy. So if it does do this.

Make a capital ship.
Name it something awesome.
If it dies, you loose the game so restart.

Its fun because it adds tons of challenge to the game. Also its just a fun way to play.
