Ive played this game for maybe 10 hours now and I have noticed that there are no animals in the game. just off the top of my head horses for mounted combat(the imperial soldiers would spend their money for this) or even just mules or donkeys that you can buy use to store and transport large amounts of materials.

Mounted combat is not going to be a feature in this game. Pack animals are planned, but we don't really know enough about that to see how it's going to work.
That being said, love the idea of using animals for things other than combat. Get a mule or oxen to handle farming and transporting equipment/goods, raise cattle for meat and milk, etc. There's a lot of potential for using animals as labour, I'd be really excited to get any confirmation from Chris that there'll be more for animals to do than just be pack animals.

I want a squad of Flesh-Eating War Camels.
More seriously, I'd love to have a farm production structure for raising various animals.

Even if we can't have mounted warfare, dogs might be possible, no? I'd like to see guard dogs (or even hawks - Natures own UAV), which could give some advance warning, especially if we are going to get wallclimbing and/or sneak attacks. They could also have some sort of sound or blinking going off on the minimap, if your outpost comes under attack and your focus is somewhere else.

In "game overview", there is a mention of predators:
Blood loss means you can pass out, and the blood will attract predators.
Since (as far as I know) humans don't have a strong enough sense of smell to be able to track a scent of blood, I'd assume things like wild dogs or something might be a planned addition.
Also, pack animals makes sense, since trade seem to be a key play style in the game. Again, human shortcomings mean we can't carry as much as donkeys, horses, oxen or Rhinos.
While mounted combat shouldn't be a feature, being able to ride a horse would also be a good idea. After all, one of the common weapons I've found on bandits is the "Horse chopper". It would also give reasons to use certain weapons. Guy comes at you on a horse? Use a sabre, and cut off the horses legs. Guy is riding away fast? Use a bow. It would prevent the game centering around a single weapon type.
